Grown at elevations of 1900 to 2300 meters, this coffee thrives in volcanic soil and a pristine micro-climate, ensuring exceptional quality. The cherries are handpicked and processed at the Zelalem Alemu mill, where only the ripest, defect-free cherries are selected for processing.
Processing & Varieties
At the mill, the cherries undergo Natural processing on raised beds, with careful manual selection for uniform drying. The coffee is composed of heirloom varieties 74110 and 74112, developed in the 1970s at the Jimma Agricultural Research Center (JARC) for resistance to coffee berry disease.
- Variety 74110: Originating from Bishari village, Metu Province, Illuababora zone, this variety is known for its compact size, high yield, and disease resistance.
- Variety 74112: Also from the Metu-Bishari forest, this variety shares similar characteristics, ensuring a consistent and flavorful cup.
